vegan ricotta
1 lb firm tofu drained
half cup raw cashews
quarter cup lemon juice
2tbs olive oil
1tsp dried basil
1tsp salt
Crumble tofu in food processor of blender
add other ingredients and blend until smooth
I have been know to add more olive oil if needed.
Friends who are not vegan say they like it better than the real thing.
If you can eat it and you like it, how can it not be ‘the real thing’?
